Veg Kolhapuri is a vegetarian dish from Kolhapur, Maharashtra in India. It can be described as a mixed vegetable dry gravy dish. It is frequently eaten as a main course. It is accompanied by a chapati in rural areas and in Kolhapur, although it is accompanied by roti, paratha, naan or kulcha in other areas, especially at fast food outlets in India.
Kolhapur is famous for its nonvegetarian fare. The red gravy, Tambada Rassa, is very popular.

Veg. Kolhapuri Paste

Kolhapur is town of Maharastra state. Kolhapuri people eat very hot food in genral, it means veg. kolhapuri is hot dish.

Ingrediants to prepare Veg. Kolhapuri

  • 75 g. Khasiyat Vegetable Kolhapuri Paste
  • 250g. Potato , diced and boiled
  • 250g. florets of Cauliflower, boiled
  • 150g. Tomatoes
  • 150g. Onion
  • 100g. Capsicum
  • 50g. French beans, half inch pieces, boiled
  • 50g. of Green peas, boiled

Recipe to prepare udupi dish may be vegetables, chicken, meat,.

  • 100g. clean, dice and boil desired item to prepare dish.

( Boil little undercook vagetables with salt, boil it un lidded to rpreserve natural colour.)

  • Strain it to separate stock and pieces, set it aside, save stock which is important in cooking.
  • Dissolve 75g. Khasiyat Veg. Kolhapuri paste in 3 cup stock/warm water set it aside.
  • Heat one tablespoons of oil in a kadai. and bring oil to proper temperature.
  • Add 1/4 tsp. asafetida and fry it till it becomes brown.
  • fry diluted khasiyat Kolhapuri paste solustion in it, stir throughly. Stir it about 30 seconds.
  • Then add pre cooked item mix it throughly in fried paste.
  • Now lower the heat and include 3/4 cup stock, simmer it slowly till gravy and pieces combine throughly and sauce becomes thicker.
  • Give finishing touch including 1/2 cup lime/lemon juice, stir gently then transfer it in serving plate.
  • Garnish it with fresh coriander/parsley in middle.
  • serve hot with roti, paratha, naan or kulcha.
