Bhuna is first and foremost a cooking process where spices are gently fried in plenty of oil to bring out their flavour. The dish "bhuna" is an extension of that process where meat is added to the spices and then cooked in its own juices which results in deep strong flavours but very little sauce. The restaurant bhuna is a well spiced curry with a thick sauce. It is often garnished with fried green peppers (equivalent word in American English bell peppers) and shredded onions. Usually medium hot although I have had some pretty hot ones in my time.
Bhuna Masala allows you to prepare everyday, a large variety of tasty dishes without the hassle of chopping   &   frying. The dishes retain that "special touch" as you adds your own spices.

Bhuna Masala

Principle spices use in central region of India is cumin seeds, Nigel seeds, ajwain seeds, and coriander seeds, cumin seeds, cloves and cinnamon sticks. Bhuna style means roasted or toasted. Central region of India is famous from the jungle called sunder van, many wander in this forest for picking dry wood to sell it for money making. They pass many days in the jungle, during this period they hunt for quick meals and without the use of utensils. Cooking is hard so they roast / cook food on fire with help of skewers. This became fashionable in the modern days.

Modern people modified it by cooking it with gravy, till it is dried out.

The spices they use gives them a little burnt sort of flavor. 'Bhuna' also means burnt flavored. When something is cooked in gravy till it becomes dry, and then covers all the pieces. You can really enjoy it with any type of Indian bread or rice
